Recipe: Leftover Vegetable Latke

I want to be able to inspire people to cook their food and take away the stigma that if you cook a healthful meal it is difficult, time consuming and expensive.

It can be … But it doesn’t have to be.

Healthy eating can be fun and it certainly doesn’t have to be hard. Here is a useful recipe that uses leftover vegetables and potatoes. The only other ingredients are cheese and eggs!

I love using leftover cooked vegetables like spinach, broccoli or brussels sprouts in my latke! I suppose I should say ‘latke’, I don’t use flour in my recipe, it’s more like a filling ‘all in one’ omelette that has potatoes in it.
