The Eight Best Ways to use Turkey Dinner Leftovers

Are the turkey dinner leftover blues sinking in yet?

Try making these dishes with your leftovers from your latest Turkey or chicken dinner. You won’t be disappointed.

  1. Pulled turkey nachos- Shred turkey and mix it with BBQ sauce (I use Diana Sauce) and Sriracha chili paste. Place dry nacho chips on tin foil or parchment paper on a cookie sheet. Next layer veggies (I suggest onion, peppers, and olives) and then add grated cheese. Finally, add the top layer of shredded turkey. Broil/Convect in oven on 400 until the cheese is melted and bubbly. Serve with guacamole, salsa, and sour cream.
  2. Turkey, spinach, cheese and asparagus quiche.
  3. Turkey and cheese quesadillas (or taquitos).
  4. Turkey chili- Replace ground beef with shredded turkey and make chili as normal. Add 1/2 cup milk or alternative in the last five minutes of cooking to give a creamier texture.
  5. Turkey melts (Make turkey salad with mayonnaise and leftover turkey and top a slice of bread with it. Add cranberry sauce and brie, roast in the oven until the brie melts. Serve hot.)
  6. Try making my mexican skillet  for supper and substitute the chicken for turkey.
  7. Brussels sprouts and turkey au gratin- see below.
  8. Stuffing crusted quiche.

You can try to stir fry your leftover sprouts to make a new meal or you can try my turkey dinner leftover au gratin!

Leftover mashed potatoes, turkey, and brussels sprouts are the base ingredients for this dish.

Brussels Sprouts Leftover Gratin is made in a glass casserole dish or pie plate with a base of chopped sprouts followed by a light dusting of grated parmesan cheese.

 

 

 

Step 2:
Top the sprouts with chopped turkey, diced onions and sprinkle with pepper.

Step 3:
Add an egg to the mashed potatoes and mix well, cover the turkey layer with the potato and egg mixture. Spread gently and evenly.

Step 4:
Score this layer so the layer of cheese can melt into the dish.

Step 5:
Top with grated cheese.

Step 6:
Top with green onions (and leftover ham if you have it). Bake at 350°F (convection) for 30 minutes until the cheese is melted, bubbling and golden.
